Ingredients:
- 1 tablespoon canola oil
- 7 ounces kielbasa sausage (sliced)
- 1 onion (chopped)
- 3 carrots (sliced)
- 8 cups water
- 1 cup lentils (about 8 ounces), rinsed
- 3 potatoes (chopped)
- 1 teaspoon Italian seasoning
- (substitute bay leaves & rosemary if you have them)
- 1 teaspoon black pepper
- 2 tsp salt
- 2 teaspoons lime juice
Directions:
- In a large saucepan, heat canola oil to medium heat
- Cook sausage slices until browned. Set aside, but leave the grease in the pan
- Cook carrots and onion in the same pan on medium heat for 5 minutes
- Add water, lentils, potatoes, salt, pepper, seasoning. Bring to boil.
- Cover and simmer for 30-35 minutes or until lentils are tender.
