Ingredients:
- 6 oz chicken breast
- 2 tablespoon canola oil
- ½ onion
- 4 ounces mushrooms
- ½ teaspoon paprika
- 2 cloves garlic, minced
- ½ can black beans
- 8 oz frozen corn
- ¼ teaspoon black pepper
- ½ avocado, chopped
- 1/3 cup shredded cheese
- 8 corn tortillas
- Salsa (as needed)
Directions:
- Chop chicken into small chunks, 1 inch (or less) square
- Heat 1 tablespoon oil in skillet over medium heat. Add chicken and cook until no longer pink.
- Remove chicken. Add another tablespoon of oil.
- Sauté mushrooms and onion in oil for 3-4 minutes. Add garlic. Sauté 1 more minute.
- Add paprika, corn, black beans, and black pepper. Heat through.
- Serve in heated tortillas
