Ingredients:
- 16 ounces tater tots (cooked according to package)
- Can substitute frozen hashbrowns
- ½ an avocado (chopped)
- 1 tablespoon canola oil
- 4 ounces mushrooms, chopped
- ½ onion, chopped
- 1 jalapeño pepper, chopped and seeded
- ½ teaspoon paprika
- 2 ounces salsa
- 2 ounces cheese
Directions:
- Bake tater tots according to package
- Heat oil in skillet at medium heat. Sauté mushrooms & onion for 3 minutes. Add jalapeno and paprika.
- Place hashbrowns on plate, top with mushrooms, onion, jalapeno. Sprinkle on cheese, chopped avocado, salsa.
