Ingredients:
- 1 tbsp butter
- 4 eggs
- 1 potato (diced or shredded)
- ½ onion
- 4 corn tortillas
Directions:
- Place diced or shredded potato in cold water while you heat the skillet (this removes some of the starch from the potato)
- Melt 1 tbsp butter in a skillet set to medium heat. Drain potatoes and place in skillet. Sauté for 5-6 minutes or until tender.
- Add diced onion, sauté an additional 2-3 minutes.
- Add eggs and scramble into potato / onion mixture.
- Wrap 2 tortillas in damp paper towel and put in microwave for 20 seconds.
- Set half the eggs-potatoes-onions for later & fill tortillas with remaining half.
