Egg Potato Tacos Ingredients

Ingredients:

  • 1 tbsp butter
  • 4 eggs
  • 1 potato (diced or shredded)
  • ½ onion
  • 4 corn tortillas 

Directions:

  1. Place diced or shredded potato in cold water while you heat the skillet (this removes some of the starch from the potato)
  2. Melt 1 tbsp butter in a skillet set to medium heat. Drain potatoes and place in skillet. Sauté for 5-6 minutes or until tender.
  3. Add diced onion, sauté an additional 2-3 minutes.
  4. Add eggs and scramble into potato / onion mixture.
  5. Wrap 2 tortillas in damp paper towel and put in microwave for 20 seconds.
  6. Set half the eggs-potatoes-onions for later & fill tortillas with remaining half.
