Bean Soup

Ingredients

  • 1 bag 15 Bean Soup
  • 1 tabelspoon butter
  • 7 oz kielbasa sausage, sliced
  • 2 onions, sliced
  • 2-4 cloves garlic (to taste)

Directions

  1. Soak the beans overnight in 10 cups of water
  2. 3 hours before serving time, strain beans, place in large pot.
  3. In a skillet on medium heat, melt the butter,cook sausage in butter until browned
  4. Add 8 cups of water to the pot, add cooked sausage, and 2 onions (sliced or chopped)
  5. Bring to a boil, simmer for 90-120 minutes
  6. Add 2-4 cloves of garlic (chopped or minced) to pot
  7. Boil 30 minutes
  8. Add the seasoning packet that came with the beans

Serve soup immediately.

BeanSoup Result

After remaining soup has cooled, strain out 2 cups of broth and place in freezer-safe bag or container. We’ll use this as a vegetable broth in future weeks. Freeze broth.
