Ingredients:
- 8 oz pasta (1/2 package)
- 1 tablespoon butter
- 2 medium zucchini (about 1 pound)
- 2 cloves garlic (minced)
- ¾ teaspoon salt
- ½ cup (2 oz) sharp cheddar cheese
- ½ cup plain or vanilla yogurt
Directions:
- Set a large pot of water to boil, cook pasta according to package
- Shred zucchini. Squeeze shredded zucchini to remove excess moisture.
- In skillet, melt 1 tablespoon butter over medium heat
- Cook zucchini in butter until tender (about 4 minutes)
- Add garlic to zucchini, cook 1 more minute. Reduce heat until pasta is ready.
- Drain pasta when done.
- Add cheese, yogurt, zucchini skillet to pot while hot, stir until cheese is melted and ingredients are combined
