Zucchini Pasta Ingredients

Ingredients:

  • 8 oz pasta (1/2 package)
  • 1 tablespoon butter
  • 2 medium zucchini (about 1 pound)
  • 2 cloves garlic (minced)
  • ¾ teaspoon salt
  • ½ cup (2 oz) sharp cheddar cheese
  • ½ cup plain or vanilla yogurt

Directions:

  1. Set a large pot of water to boil, cook pasta according to package
  2. Shred zucchini. Squeeze shredded zucchini to remove excess moisture.
  3. In skillet, melt 1 tablespoon butter over medium heat
  4. Cook zucchini in butter until tender (about 4 minutes)
  5. Add garlic to zucchini, cook 1 more minute. Reduce heat until pasta is ready.
  6. Drain pasta when done.
  7. Add cheese, yogurt, zucchini skillet to pot while hot, stir until cheese is melted and ingredients are combined
