Ingredients
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 eggs (beaten)
- 1 1/2 cups mashed ripe banana (about 5)
- 1 cup sugar
- 1/2 cup canola oil
Directions
- Preheat oven to 350. Grease 2 loaf pans w/ canola oil & set aside.
- In large bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Make a well in the middle.
- Combine eggs, banana, sugar, and oil. Add egg mixture to dry ingredients. Stir until combined.
- Bake for 50 minutes or until toothpick or knife can be inserted and come out clean.
- Allow 10-15 minutes to cool before removing from pan.
- If desired, wrap one loaf in foil and freeze.
