Ingredients
- 1 tablespoon canola oil
- 16 ounces chicken
- 2 onions, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 2 tablespoons chili powder (or just 1, if you want less kick)
- 2 teaspoons cumin
- 1 teaspoon salt
- 2 cans diced tomatoes (do not drain)
- 2 cans kidney beans (do not drain)
Directions
- Heat large pot to medium, add oil and cook chicken until no longer pink.
- Add onion, bell pepper, garlic, cook for 6 minutes, until onion is tender.
- Stir in chili powder, cumin, salt. Add tomatoes with the liquid. Cover and cook for 1 hour, stirring occasionally.
- Stir in the beans with their liquid. Heat to boiling and simmer for 20 minutes.
