Chili Ingredients

Ingredients

  • 1 tablespoon canola oil
  • 16 ounces chicken
  • 2 onions, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder (or just 1, if you want less kick)
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 2 cans diced tomatoes (do not drain)
  • 2 cans kidney beans  (do not drain)

Directions

  1. Heat large pot to medium, add oil and cook chicken until no longer pink.
  2. Add onion, bell pepper, garlic, cook for 6 minutes, until onion is tender.
  3. Stir in chili powder, cumin, salt. Add tomatoes with the liquid. Cover and cook for 1 hour, stirring occasionally.
  4. Stir in the beans with their liquid. Heat to boiling and simmer for 20 minutes.
